This fine green powder was used in preparing drinks, but now days Matcha started to be used as flavor in preparing food, cakes and desserts. I think it is the right time for you to try using the matcha powder by trying this cake-cheese cake recipe, which have a triple shot of matcha flavor, sweet, creamy and fluffy, and still considers kind of healthy treat.
I personally drink matcha latte mostly every morning, and I don’t mind of flavoring my food or desserts with it. I made matcha rice pudding before, it was very yummy healthy pudding which starts to be one of the most prepared recipe inside my house. I prepared matcha Japanese cotton cake that I did’t post yet; which had a dreamy flavor with a nice velvet green color, I baked many kind of cupcakes and muffins with match inside, beside of the matcha drinks and shakes.
In this recipe I prepared a non bake cheesecake. I baked the cake and let it cool down, then divided it into two equal halves. To make a perfect shape cake-cheesecake; I used the same baking pan that I baked the matcha cake in, lined it with cling wrap, put the first layer of the cake in the bottom of the pan, then poured the cheesecake batter over it, I finished with the second halve of the cake as a top layer. chilled it over night, next evening me and the family enjoyed it with matcha whipping cream and fresh raspberries.

to prepare the cake,
Ingredients:
2 eggs at room temperature
1\4 tsp strong vanilla flavor (you can use one vanilla bean pod instead)
3\4 cup honey (you can use sugar,brown sugar, or maple syrup instead)
1\4 cup canola oil
1\2 cup milk(you can use any kind of milk you prefer )
1 cup cake flour
1 Tsp baking powder
1 Tsp matcha powder
Method,
prepare your baking pan(line it with parchment paper or simply oil it), preheat the oven to 370degrees,
Sift the flour, matcha powder and baking powder together, mix them by a wooden spoon. put the eggs and vanilla flavor inside the mixer bowl and start to mix them until it is a foamy mixture, add the honey, milk and oil, increase the speed a bit until well mixed. Now add the wet mixture to your dry ingredients, using a wooden spoon, fold and mix, until well mixed. pour the mixture inside the baking pan and bake it for about 35 minutes. cool it down and start to prepare the cheesecake batter.

To prepare the cheesecake,
1 1\5 blocks cream cheese (340 g)(12 oz)
2 envelops dream whip
1 Tsp matcha powder
1 cup whipping cream
1\4 cup sweetened condensed milk
1 tsp non flavor gelatine
2 Tsp hot water
Method,
Dissolve the gelatin with the hot water and set aside until cool down
Beat cream cheese till smooth at low speed. Add the dream whip powder, matcha powder and mix well in medium speed until smooth. Add the whipping cream, the sweetened condensed milk and the cooled gelatin with keep mixing at high speed until the mixture is thick and creamy.
Use the same pan that you baked the matcha cake in, line it with clink nylon wrap all over inside it with let more extra wrap out of the edges, cut the cake into two halves put the first have in the bottom of the pan now Pour the cheesecake mixture over it then cover the cheesecake layer with the second half and chill overnight.
To prepare the matcha whopping cream,
2 envelops dream whip
3\4 cup whipping cream
1\2 tsp matcha powder
1\4 tsp vanilla flavor
raspberries for garnish and extra matcha powder for dusting
Method,
Mix all ingredients (except the garnish) at a high speed until you have a firm texture whipping cream cool it then cover your cake with it, you can garnish with fresh raspberries and dusting more matcha powder, enjoy.
