Middles Eastern Za’atar pinwheels


This recipe is one of the dearest recipe to my heart, it reminds me with my lovely mother who influenced me a lot with her tasty food, and this recipe is one of that recipes that MOM used to prepare as soon as the Spring arrives, because Spring is the official season of collecting Za’atar ; which is an arabic name for Oregano that grows throughout hills and mountains of Jordan and Palestine. When spring is there in Jordan villagers used to spread out throughout mountains looking for fresh Za’atar and other wild herbs that was just founded there, I still remember that old days when my MOM, Grandma, me and my sisters were having fun walking throughout the hills and trying to pick as much as we can of these herbs, unfortunately, old days never come back 😦 .


Fatayer Falhi is another name for these pies which means the villager fatayer or pies. It is a very simple and basic dough which filled with fresh Za’atar leaves ,onion, and Sumac. Olive oil is used in a plenty amount on this recipe so these pies will turn very yummy and crunchy.


to prepare these very yummy pies just follow the steps bellow,


3 cups white flour
1\4 teaspoon salt

2 to 3 cups fresh zaatar leaves (Oregano), washed
1 medium-size onion, finely chopped
1 tablespoon sumac
1 teaspoon salt or as desired , 1\4 tsp ground pepper
4 tablespoons olive oil,and a juice of half of a lemon.


In a medium size bowl, combine flour and salt then start to add water and mix and knead until you have a very soft elastic dough I prefer to keep it little sticky . In a deep bowl add about 1\4 cup olive oil and try to brush the whole bowel with the oil then put your dough on the oil inside the bowl then cover it with a damp cloth, let it rest for about hour or so. In the mean while start to prepare the filling.

on a medium heat add the olive oil and onion half amount of salt and stir it over the medium heat until turns yellow and soft add the Za’atar leaves, Sumac, the rest of salt, and the pepper and give it a stir together,add the lemon juice, then turn the heat off .

After the dough has a good time resting, cut it for a small balls just as the size as the golf balls and let them to rest again for half of hour.  grease your counter surface with olive oil, take a dough ball, and roll it out until you make a paper-thin sheet of dough. take a pinch of the filling and spread it all over the dough and then start to roll the dough exactly like rolling the cinnamon rolls dough) then shape it in a wheel shape ,then put it in a baking pan that greased with olive oil, do the same with all dough balls. then bake them on a very hot oven (450 degree ). Enjoy them with a hot Na’na (Arabic name of Mint)tea.

٣ كاسات طحين

ربع ملعقه صغيره ملح

ماء للعجن

مقادير الحشو

كاستين لثلاث كاسات زعتر ورق طازج

بصله حجمها وسط مقطعه ناعم

ملعقه صغيره ملح او حسب الرغبه

ملعقه كبيره سماق

٤ ملاعق كبار زيت زيتون

عصير نص ليمونه

ربع ملعقه فلفل اسود


نبداء بعجن الطحين المضاف اله الملح وذلك بأضافه الماء تدريجيا  حتى نحصل على عجينه طريه ومرنه وبفضل تكون قليلا تلتصق باليد ، ندهن وعاء بمقدار تقريبا ربع كوب زيت زيتون ونضع العجين داخل الوعاء ونغطيها بفوطه مبلوله او نايلون ونتركها ترتاح حوالي ساعه او اكثر. نجهز الحشو وذلك بتذبيل البصل بزيت الزيتون فوق نار وسط مع القليل من الملح حتى يصبح طريا ثم نضيف الزعتر الورق السماق، الملح الفلفل ونحركهم سويا جيدا ثم نضيف عصير الليمون ونطفئ النار ونتركها تبرد

بعد مرور ساعه على ترييح العجينه نقوم بتقطيعها لكرات صغيره قم نغطيها ونتركها ترتاح نصف ساعه اخرى. بعد مرور النص ساعه ندهن سطح العمل بزيت الزيتون ونبدء بفرد كرة العجين حتى نحصل على عجينه رقيقه جدا وشفافه نضع عليها قليلا من الحشو ونفرده فوق العجين ثم نبداء بلف العجين ونشكله على شكل حلزوني ونتركه بصينيه الخبز المدهونه بزيت الزيتون حتى ننهي الكميه ثم نخبزهم بالفرن المحمى مسبقا على حراره ٤٥٠ درجه فهرنهايت . استمتعوا بأطيب نكهه مع كاسة شاي بنعنع ويا سلااااااام احلى فطور او عشا او حتى عصرونه وفيش احلى منك يا بلادي ولا فيه احلى واطيب من اكلات بلادي
