I posted before Cardamom date muffins recipe, which was very yummy and successful. More than one hundred applies to the recipe I received with pictures for the muffins, and many greetings were sent to me for how successful the recipe was. I was so happy and proud of my self, So I thought maybe I can upgrade my recipe to the next level by adding a layer of a date cheesecake in-between two layers of Date cake, and maybe upgraded it more by topping it with coconut raffaello which made this upgraded cake explodes with the most original Arabic flavors, which will never be forgotten taste,and yes, I baked the cake, I prepared the cheesecake,and yes I topped it with the dreamy taste of coconut balls, and I can not describe how these mixed flavors and texture when you have the first bite of it, you just fall in love in the same time and can not resist to eat it all, I am sure you will lick your fork until the last bite 😀
I made this cake on the honer of my mother in-law birthday, it really made me so happy to see a smile on her old face, with an appreciation look, and what made me the most happy was how much they loved the cake design and the taste.
to prepare this cake just follow the recipe bellow,
Ingredients

for the cake,
1 ½ cup flour
1 tsp cinnamon
1 1\2 tsp baking powder
1\4 tsp baking soda
1 tsp cardamom powder
1 cup of canola Oil
3/4 cup brown sugar
3 eggs
1 cup yogurt
1 1\4 cup date paste or puree(you can use whole dates take the seed out heat it inside the microwave then place it in your blender with a couple of table spoons water and grind it until paste forms)
1 cup yogurt(you can use butter milk or sour cream instead)
to prepare the cake
set your oven at 350 f , prepare your cake mold(I used a cheese cake mold)
Sift dry ingredient together (the first 5 ingredients )
place the oil and brown sugar in your mixer and start mixing them with the whisk hand until become creamy , add the eggs gradually one at a time with a mixer speed med-high, add dates Puree in batches and mix well.
add the yogurt with the flour mixture(the dry ingredients ) in three batches at low speed mixer, the resulting mixture will be kind of thick, pour it into the mold then bake it until done. let it to cool completely

For the cheese cake layer,
2 blocks cream cheese (16 oz)
2 envelops dream whip
1\2 cup dates puree
1 cup whipping cream
1 tsp non flavor gelatine
2 Tsp hot water
Method,
Dissolve the gelatin with the hot water and set aside until cool down
Beat cream cheese till smooth at low speed. Add the dream whip powder, date puree and mix well in medium speed until smooth. Add the whipping cream, and the cooled gelatin with keep mixing at high speed until the mixture is thick and creamy.
Use the same pan that you baked the date cake in, line it with clink nylon wrap all over inside it with let more extra wrap out of the edges, cut the cake into two halves put the first have in the bottom of the pan now Pour the cheesecake mixture over it then cover the cheesecake layer with the second half and chill overnight.
